Zucchini Boats Stuffed with Lentils

Super easy way of preparing zucchini boats packed with healthy foods!

Remove centers
Cut your zucchini lengthwise and remove the centers. Don't throw it away, we will use it in the lentils stuffing.

Make the filling
Grab a pot, heat it up and add coconut oil.
Once melted you add in the onion and garlic. Fry for a few minutes.
Then add in the jalapeño, coriander, oregano, thyme and smoked paprika. Stir well.
Continue by adding the zuchinne centers (that your removed a step earlier), tomato paste, spinach, diced tomatoes, vegetable broth and cooked lentils.
Mix it well and turn of the fire.

Fill the boats
Lay the zucchini boats on an oven tray and fill them up.
Top them with cheese if using.

Bake
Bake the boats for 20 minutes on 200 °C/390 F.
