Preparing tofu in the slow cooker is so awesome! The tofu not only absorbs the taste but it’s also one of my go to’s for meal prep. The cool thing about a slow cooker is that you can set it and forget it. How cool is that!
And by letting the tofu cook for a longer while in the spices and juice, it really is full of juice and flavor.

Vegan Tikka Masala Tofu (Slow cooker)
Description
Delicious tikka masala tofu, I really like tofu slow cooker recipes as the tofu really takes in all the flavor and ends up super juicy!

Mix all the spices and set aside. Heat the coconut oil in a skillet over medium heat, and add the diced onion with a pinch of salt. Cook the onion, stirring occasionally, until translucent and starting to lightly brown, 4 to 6 minutes.

Add the cumin seeds and cook for 60 seconds more. Add the garlic, ginger, and chili pepper, and cook for another 60 seconds. Stir in all the spice mixture and cook, stirring constantly, just until fragrant, about 45 seconds.

Add the mushrooms, bell pepper, nutritional yeast, and tomato paste, and cook for 2 more minutes, stirring frequently. Finally, add the tomatoes and stir well, scraping around the bottom of the pan. Cook for 3-4 minutes or until the tomatoes are starting to soften. Turn off the heat.

Now add the spice mix we just made to your slow cooker along with the diced tofu. Pour in your veggie broth/salt. Mix it well.

Now let it cook for 2 hours on high/4 hours on low in your slow cooker.

Serve with some rice and top with lemon juice and cilantro, if using.
