Protein Packed Vegan Sausage with vital wheat gluten/seitan

Plant based sausage, great for the BBQ and in a vegan hot dog.

  • 1/3 cup Chickpeas
  • 2 tablespoons Soy Sauce
  • 1 teaspoon Maple Syrup
  • 1/3 cup Tomato Paste
  • 1/3 cup Vegetable Broth
  • 1 tablespoon Dijon Mustard
  • 2 tablespoons Nutritional Yeast
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 pinch Cumin
  • 1 pinch Coriander
  • 1/4 teaspoon Oregano
  • 1 teaspoon Smoked Paprika
  • 1/4 teaspoon Cayenne Pepper
  • Black Pepper
  • 1 cup Vital Wheat Gluten (150g)
  1. Combine all the ingredients except the vital wheat gluten in a food processor and mix well.

  2. Transfer into a bowl and add the vital wheat gluten and combine well with a spoon.

    Now get in there with your hands and form it into a dough. Don’t knead it. You just want it to be mixed and formed into a dough

  3. Cut the dough into 6 equal pieces and roll into sausages.

    Wet your hands to make is easier.

  4. Roll in baking paper and aluminum foil and steam for 20 minutes.

  5. Ready to use on your BBQ or bake in a pan with some oil.
