This traditional Mexican dish, aka red enchilads is one of the first things I will on my next trip to Mexico!

The salsa



Off On

  1. To a blender add the peeled garlic, tomato paste, tomatoes, chipotle, oregano, black pepper, salt and a little bit of water.

  2. Blend until smooth, and adjust flavor if needed.

  3. To a small pot add some olive oil, let heat up and pour in the salsa we just made. Let simmer for 5 minutes.

  4. Meanwhile, you can start heating up your tortilla's and beans for the filling.

  5. Once the tortilla's are heated, add your filling, roll the tortilla's and put them on your plate.

    Pour over the sauce we just made and add toppings of your choice.
