Vegan Meatballs With Tofu

These go so good with a delicious tomato sauce or with many other dishes.
For example, in a delish "meat" balls spaghetti sauce!

  • 2 tablespoons Flax meal
  • 6 tablespoons Water
  • 1/2 tablespoon Coconut oil
  • 250 grams Mushrooms
  • 1 Onion (Medium)
  • 4 cloves Garlic
  • 400 grams Tofu (Firm)
  • 1/2 cup Steel cut oats
  • 1/4 cup Nutritional yeast
  • 1/4 cup Chives (Dried or fresh)
  • 1 tablespoon Black pepper
  • 1 tablespoon Salt
  • 1/2 tablespoon Chili flakes
    Flax eggs
  1. Start by making 2 flax eggs. Add together; 2 tbs of flax meal and 6 tbs of water, let rest for at least 15 minutes.
  2. Tofu Meatballs
  3. Preheat the oven on 180 °C/350 °F.
  4. Make the "meat"

    ✅ Add the onion, garlic and mushrooms to a food processor and blend until no big chunks remain. Sauté the blend in a bit of coconut oil for approximately 8 minutes until most of the water is evaporated.

    ✅ Now combine the sauté and all the ingredients together. In a bowl mix the sauté, the 2 flax eggs, crumbled tofu, the steel cut oats, nutritional yeast, dried or fresh chives, black pepper, salt and if you like spicy, go ahead and add the chili flakes.

    ✅ Make ice cream ball sized "meatballs" and put them in the oven for ±20 minutes, until they look gold-brown at the outside.
