Lemon is one of those things: you either love it or hate it. If you are the first type of person, then you must try this vegan lemon mustard salad with couscous!

Mustard is something I love so much, but only prepared in certain ways. Like with roasted chickpeas or a mustard tofu (recipes for these on our website thebgang.com).

So, now the question: do you love or hate mustard?

  1. Prepare your couscous (follow the packaging instructions). Use red lentils couscous for gluten free.

  2. To a pan, add some coconut oil, followed by chopped onion and turmeric. Sauté for a few minutes and then add in the garlic, a splash of vegetable broth, salt, pepper and sauté a few more minutes. Now add in all the chopped veggies and the remaining broth.

    Let cook until soft, about 10 minutes (broth should be almost completely dissolved, ideally).

  3. For the dressing, to a bowl add the lemon juice, mustard, soy sauce, and chopped parsley. Mix well.

  4. Now combine the couscous with the vegetables and the dressing you just made.

  5. Enjoy this super fresh tasting dish!
