Mustard is something I love so much, but only prepared in certain ways. Like with roasted chickpeas or a mustard tofu (recipes for these on our website thebgang.com).

Vegan Lemon Mustard Salad With Couscous

One of the best mustard salads you will ever have!

Prepare your couscous (follow the packaging instructions). Use red lentils couscous for gluten free.

To a pan, add some coconut oil, followed by chopped onion and turmeric. Sauté for a few minutes and then add in the garlic, a splash of vegetable broth, salt, pepper and sauté a few more minutes. Now add in all the chopped veggies and the remaining broth.
Let cook until soft, about 10 minutes (broth should be almost completely dissolved, ideally).

For the dressing, to a bowl add the lemon juice, mustard, soy sauce, and chopped parsley. Mix well.

Now combine the couscous with the vegetables and the dressing you just made.
