So there were some leftover lentils in the fridge, and didn’t know what to do with them. But, then I had the idea to make lumpias with them using rice paper!

I thought this would be my first original recipe that I invented, but no, of course someone was before me… lol.

Anyhoooo, loved these, and they came out super crunchy – wasn’t sure what to expect.

These are actually similar to the crunchy lentil taco’s I made a while back – only difference is the skin.

  1. Dip your rice paper into hot water, fill them up with the lentil mix and roll tightly.

  2. Brush with some olive oil.

  3. Bake in the oven on 200Β°C/390F for about 20-30 minutes (not sure how long, make sure to check every once in a while, didn't time it ????).

  4. Enjoy with your favorite sauce!
