This vegan curry with potatoes is super easy and good, never can get enough of a curry right!

Vegan Curry

  1. Heat up a big pot and add some olive oil.

  2. Sauté the onion and a few seconds later add the garlic.

  3. When the onion and the ginger are caramelized; add all the spices.

  4. Cook

    Now add the:

    • Rinsed Chickpeas
    • Garlic
    • Vegetable Broth
    • Potatoes
    • Coconut Milk

    Let simmer for 10 minutes.

  5. Add the coliflower and mushrooms, let simmer 10 more minutes.

  6. To finish it of, add the lemon peel and juice.

Sautéed Onions - Topping

  1. Heat up a pan and add a little bit of olive oil or some hot water if you wnat to reduce the fats.

  2. Add the red onion, a pinch of salt and pepper. Sauté until caramelized.

Enjoy 👍🏽

  1. Divide over deep plates and top it of with the caramelized onion and sprinkle some cilantro on top if you will.
