Vegan Curry With Potato And Chickpeas

Instructions
Vegan Curry

Heat up a big pot and add some olive oil.

Sauté the onion and a few seconds later add the garlic.

When the onion and the ginger are caramelized; add all the spices.

Cook
Now add the:
- Rinsed Chickpeas
- Garlic
- Vegetable Broth
- Potatoes
- Coconut Milk
Let simmer for 10 minutes.

Add the coliflower and mushrooms, let simmer 10 more minutes.

To finish it of, add the lemon peel and juice.
Sautéed Onions - Topping

Heat up a pan and add a little bit of olive oil or some hot water if you wnat to reduce the fats.

Add the red onion, a pinch of salt and pepper. Sauté until caramelized.

Divide over deep plates and top it of with the caramelized onion and sprinkle some cilantro on top if you will.
