Vegan Chili Potato Bake
A dish that you must try this week.
Heat a large sauce pan, and add olive oil. Sauté onion, garlic, carrots and chilli flakes.
Add the tomato pasta, pasata, and the spices (paprika, cumin, cinnamon, oregano, black pepper and veg stock), finely add water and let simmer for 4 minutes.
Then add the beans for protein, mix and transfer to a baking casserole.
Top with thin disks of potato, eggplant and tomato. Season with salt and pepper.
Bake for 25-30 minutes 280C/350F.
