  1. Soak the cashews for +10 minutes in hot water.

  2. Boil the peeled and dice potatoes and carrots in salted water for 12-15 minutes.
    Depending on the size, more or less.

  3. Add the potatoes and carrots to a blender and add 1 cup of the broth as well. Add the drained soaked cashews, nutritional yeast, lemon juice, salt,garlic powder, paprika powder and cayenne pepper.

    Blend until smooth.

  4. Enjoy with nachos, veggies or even with tacos or on a vegan burger.
