This super quick and easy vegan cashew stir-fry’s is one of my all-time favorites ????. The cool thing about this dish is that you can also just use any vegetable you happen to have at home, super convenient.

Vegan Cashew Vegetables Stir Fry, Takes Just 20 Minutes

Super easy and quick vegetable cashew stir-fry that goes well with any vegetables you happen to have! Super convenient.

To a pan add some sesame oil and turn on medium heat.
Once heated add in the garlic and stir for a few minutes, then add in the garlic and ginger. Stir another 2 minutes until fragrant and add in the ground chili.

Now add in all the chopped ingredients: carrots, bell pepper, broccoli, cauliflower, green beans. Stir well, cover with the lid and let cook for about 6 minutes.

Now for the sauce, mix 4 tbsp of soy sauce with 2 tsp cornstarch. Combine and pour it in.
Also go ahead and add in the roasted cashew nuts.
Mix and cook for another few minutes if needed, until the vegetables are to your liking (I like my vegetables still crunchy).

Serve this stir fry with some whole grain rice and seitan!
