This one pot vegan chickpeas bolognese is the thing! Simply put it in the oven and let it bake. So good!
- 400 grams Pasta (Whole grain)
- 250 grams Chickpeas
- 1 Bell pepper (Red or yellow, diced)
- 1 Zucchini (Diced)
- 200 grams Mushrooms (Sliced)
- 500 grams Tomato sauce (Once can)
- Water (To cover the pasta)
Spices
- 1 teaspoon Garlic powder (Or minced garlic)
- 2 Bay leaves
- 1/2 teaspoon Salt (Or more to taste)
- 1/2 teaspoon Black pepper (Or more to taste)
- 1 teaspoon Oregano
- 1 teaspoon Coriander
- 1/2 teaspoon Red chili flakes (Optional, sub with cayenne pepper)
- 1 teaspoon Smoked paprika
- 1/2 teaspoon Nutmeg
