Vegan 10 Ingredient Lentil Bolognese
Soak the lentils in water for 30 minutes, or up to 60 minutes. Meanwhile, prep all the other ingredients (i.e., chop the onions and garlic, chop the walnuts, etc.)
To a pan add the olive oil, heat up.
Once heated add onion and garlic, let sauté for a few minutes.
Add the carrots and celery after a while, stir well. Cook for 3 minutes.
Now add the remaining ingredients (bell pepper, mushrooms, veggie broth) and simmer 2 minutes.
Continue with adding all the spices (bay leaves, thyme, oregano) and the soaked lentils and pour in the tomato sauce.
Add some water if needed and simmer about 20 minutes until soft.
