This must be one of my favorite soups! I really like this Tuscan cannellini soup because it has beans in it. Often my problem with soups is that they lack protein but by adding beans you can easily change that!
The kale in this soup is another great source of nutrients like vitamins A an K. One of the best green vegetables!
Tuscan Soup With Cannellini (white) Beans and Kale
Grab a big pot, turn on medium heat and add in sesame oil. Let heat up for a few minutes and then add in the onion, stirring frequently for a few minutes.
Add in the carrots, thyme, chili and minced garlic. Stir for an additional two minutes.
Add in the cannelini beans along with their juice, the broth, pepper and bay leaves. Mix well and simmer about 10 minutes.
Add in the kale, pour in some more water if needed and mix.
Let simmer for 3 more minutes on low heat.
When serving add some lemon juice and eat with some bread.
