Vegan Tajine With Brussels Sprouts

Heat the coconut oil in a large casserole dish and add the onion, garlic and bell pepperS.
After a few minutes add cinnamon, turmeric, smoked paprika and tomato paste. Stir frequently and cook for a few more minutes.
Finely add vegetable stock, some water, the drained chickpeas and some dried apricots.
In a new pan sauté half a teaspoon of cumin seeds and the brussels sprouts in some coconut oil, don't forget to add salt. - If you don't have cumin seeds, just add some cumin powder or the brussels sprouts.
Enjoy with quinoa, rice, couscous,... ????????
