A delicious Vegan Tajine With Brussels Sprouts.

  1. Heatย  the coconut oil in a large casserole dish and add the onion, garlic and bell pepperS.

  2. After a few minutes add cinnamon, turmeric, smoked paprika and tomato paste. Stir frequently and cook for a few more minutes.

  3. Finely add vegetable stock, some water, the drained chickpeas and some dried apricots.

  4. In a new pan sautรฉ half a teaspoon of cumin seeds and the brussels sprouts in some coconut oil, don't forget to add salt. - If you don't have cumin seeds, just add some cumin powder or the brussels sprouts.

  5. Enjoy with quinoa, rice, couscous,... ????????ย
