Vegan carbonara! My first shot ever at making a carbonara and I love it.
I know shiitake mushrooms maybe aren’t part of the original carbonara but hey, they make a great fit 😜.

Super creamy vegan carbonara and the shiitake mushrooms go great with it! 🤤
The bacon shiitake mushrooms - optional
The bacon shiitake mushrooms
Add the sliced mushrooms to an oven tray and season with: olive oil, smoked paprika, salt and pepper.
Bake them for 14 minutes on 190°C/390F flipping them midtime.
Add all the ingredients to a blender (soaked cashews, olive oil, garlic, nutritional yeast, lemon juice, silken tofu, water, pepper, salt, smoked paprika) and blitz ✨ until smooth.
Preform a taste test and adjust where needed.
Now in a pan add coconut oil, let it melt and throw in the vegan bacon. Let cook for 5 minutes.
Continue by adding in your favorite vegan pasta and the sauce. Mix well and turn off the heat.
Serve it up and top off with some parsley and the baked shiitake mushrooms, astounding!
