Super simple bowl recipe, spicy peanut tofu is so good, the kale and carrots give it a great fresh touch as well.

If you have never tried peanut tofu this is your sign! It’s one of my favourite ways of making tofu.

Make sure to use a good quality PB though, I use a 100% one without any added sugars or salt. The purer, the better!

The tofu

  1. To a small bowl add soy sauce, garlic, ginger, sesame oil and maple/agave syrup.

    Mix it well.

  2. Now to a bigger bowl add your sliced tofu and pour in the sauce you just made.

    Make sure the tofu is properly coated.

  3. Now in a pan add some oil and cook your tofu on each side until lightly brown.

The peanut sauce

  1. In the same small bowl add in the peanut butter, thai red curry paste, soy sauce, ginger and boiling water. Mix well and taste.

Carrots and kale

  1. Grate your carrots and optionally cook the kale for a few minutes in salted water with pepper.
