In a big bowl combine the flour, salt, sugar, yeast, oat flour, water and olive oil.
Combine well and form a ball.

Add a little olive oil to a bowl, dip the dough ball in it spread it with your hands all over the outside.
Set in a bowl, cover with a towel and let rest at room temperature for 2 hours.

Divide the dough in 2 and make 7 mini breads out of each half.
Dip one by one in some water and then in seeds like sunflower, poppy and sesame.

Lay on an oven tray and optionally cover with a towel and let rest for 30 more minutes.

Bake for 20 minutes on 180C/350F.
