This pasta was just some random stuff I had in my fridge, but wooow the zucchini, cherry tomatoes and bell pepper with the lemon juice and spices go so well together!

The chili flakes added a bit of spice, which made it so much better.

I also added some salad of point cabbage and avocado to this to eat some fresh vegetables. Unexpectedly good!

  1. Start by boiling water and cooking your pasta.

  2. To a big pot add some olive oil and let it heat up. Once heated, add in onion, chili flakes and garlic, sauté for a few minutes.

  3. Then add in the vegetables (zucchini, bell pepper and cherry tomatoes). Stir well.

  4. Pour in your vegetable broth and add in your spices, followed by some lemon juice.

  5. Cover with the lid and let cook for 10 minutes.

  6. Add in your diced smoked tofu and some fresh basil for extra flavor.
