Description

This spinach salad will get you as strong πŸ’ͺ as popeye πŸ˜‰. TheΒ smokeyΒ πŸ”₯ tempeh is deli!

Ingredients
    Smokey tempeh
  • 160 grams Tempeh (Good quality makes the difference)
  • 1 tablespoon Chipotle
  • 1 teaspoon Agave syrup (Optional)
  • 1 teaspoon Soy sauce
  • 1 teaspoon Ginger (Minced)
  • 1 clove Garlic (Minced)
  • Spinach salad
  • 110 grams Spinach
  • 1/4 Red onion (Chopped)
  • 1 tablespoon Ginger (Minced)
  • 2 tablespoons Lemon juice πŸ‹
  • Salt (To taste)
  • Black pepper (To taste)
  • 1/4 cup Sunflower seeds (Optional)
  • 1/4 cup Cilantro (Chopped, optional)
  • Quinoa
  • 1/2 cup Quinoa
  • 1 cup Water
  • 1 teaspoon Vegetable broth (Or salt)
Instructions
    Smokey tempeh
  1. Preheat the oven to 180Β°C/350 F.
  2. Make the seasoning and dip the tempeh
    Get yourself a big bowl and start adding the ingredients:
    1. Chopped garlic
    2. Chopped ginger
    3. Chipotle
    4. Soy sauce
    5. Agave syrup (if using)
    Mix it along with the tempeh and make sure every piece of tempeh has sufficient seasoning πŸ˜‰.
    Bake the tempeh in the oven for 4O minutes.
  3. Quinoa
  4. Cook for 15 minutes

    Cook the quinoa for 15 minutes in ratio 1:2 (2 cups of water for 1 cup of quinoa).

    Add your vegetable broht if using.

  5. Spinach salad πŸ₯—
  6. Make dressing and mix with spinach
    1. Get a big salad bowl and cut the red onions very fine πŸ§…(sliced).
    2. Pour in the lemon πŸ‹ juice, so the onion can pickle.
    3. Add your chopped cilantro.

    1. Now go ahead and rasp the ginger and garlic πŸ§„ into the salad bowl, along with the pickled onion.
    2. Let these pickle for at least 10 minutes, after that, you can go ahead and add the spinach and mix it.
    3. Add some salt πŸ§‚ and stir again.
    Once you combine the dressing with the spinach you should consume it, otherwise the spinach will start to look bad.
