This slow cooker stew with eggplant and sweet potatoes is a super meal prep meal. Slow cooker recipes always save you a lot of hands on time. Don’t have a slow cooker? You can find a good one that we recommend on our shop.

The spice mix

  1. Toast

    Add the coconut ???? oil to a pan and let melt.

    Once melted add the onion ????, garlic ???? and ginger. Stir frequently.

    When add all the other spices and stir frequently for 3 to 5 minutes.

    Honestly, you could replace all the spices with a spice mix called baharat. It consists more or less with these spices.

The stew

  1. Combine

    In goes:

    • The spice mix
    • The tomatoes ????
    • Sweet potatoes ????
    • Eggplant ????
    • Soy beans (preferably soaked for +6 hours)
    • Water to cover (make sure you add enough or check midtime)
    • Vegetable broth

    Mix well.

  2. Slowcook

    Now let it cook for 6-8 hours on low heat in the slow cooker.
