I’m Mexican, so naturally tacos are on the list of my favorite foods! I love this way of preparing them as it is quick and using chipotle makes it taste Mexican automatically.

  1. Boil some water and start by soaking your soy chunks in that water for at least 10 minutes.

  2. Continue making the sauce, grab a pan and turn on medium heat. Add in coconut oil and let melt.

    Add in the sliced onions and let them sautée.

  3. Once they are done add them to the blender along with garlic, cloves, canned tomatoes, black pepper, vegetable broth, chipotle and some water.

    Blend the sauce until smooth and do a  taste test. Add more salt, chipotle or pepper as desired.

  4. Now into the same pan you sautéed your onions add int the sauce and drained soy chunks, let them simmer for 10 minutes.

    Meanwhile, make your pickled onions and chop your garlic.
