Soak the dry soy chucks in hot water for 10 minutes.
Meanwhile, sauté the leeks with some vegetable broth for 10 minutes. If you like you can add some thyme and a bay leaf.
Add the soaked soy chunks let simmer for 5 more minutes.
Potato Mash

In a big enough pot boil your potatoes for approximately 20 minutes, this varies from potato size and type.
Set half of the water aside and use it later on if needed (if to dry). Mash the potatoes, add the olive oil, a lot of nutmeg and black pepper.

Add the soy chunk leek mix to a casserole and on top the potato mash.
For a nice crust add all the other spices/ingredients on top:
Bake this for 5 minutes on 280C/350F to crunch it up or 25 minutes if heating up after storing in the fridge.
