A top-notch gnocchi recipe!

  • 500 grams Gnocchi
  • 500 grams Tomato (chopped)
  • 350 grams Chickpeas (1.5 cans, rinsed)
  • 1 Small Broccoli (chopped)
  • 1 Medium Onion (sliced)
  • 4 cloves Garlic (minced)
  • 2 tablespoons Olive Oil
  • Salt
  • Black Pepper
  • Lemon Juice (optional for seasoning)
  • Vegan Feta (optional for seasoning)
  1. Preheat the oven to 220C/425F.

  2. Place the gnocchi, chopped tomato, sliced onion, chickpeas, and chopped broccoli on an oven tray and season with olive oil, salt and black pepper.
  3. Toss it around and bake for ±30 minutes.

  4. Serve and enjoy with a few drops of lemon juice and some vegan feta cheese.
