The best way to make sweet potato salty!

    Baked Sweet Potatoes
  • 4 Sweet Potatoes
  • 2 teaspoons Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • The Salad
  • 1/2 Red Onion (Chopped)
  • 2 cups Tomato (Diced)
  • 1/2 Cucumber (Diced)
  • 1 Bell Pepper (Diced)
  • 2 teaspoons Olive Oil
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Black Pepper
  • 1/2 tablespoon Salt
  • 1 tablespoon Zumac
    Mediterranean Sweet Potatoes
  1. Preheat the oven to 180C/350F.

    Cut the sweat potatoes in half and brush some olive oil on them, season with salt and pepper.

    Bake Until soft, ±50 minutes.

  2. Once soft, mash them a little and top with roasted chickpeas and a tahini sauce for example.

  4. In a big bowl add all the chopped vegetables for the salad and season with salt, pepper, olive oil, lemon juice and zumac.
