This Mediterranean Sweet Potato takes no effort to make and goes nicely into the oven to bake together with some Roasted Chickpeas for example. And you can make the salad simultaneously.

We topped this with a Delicious Tahini Sauce which you should do to!

And in the salad we added zumac which gives it a nice sweet sour taste together with the lemon juice.

Mediterranean Sweet Potatoes

  1. Preheat the oven to 180C/350F.

    Cut the sweat potatoes in half and brush some olive oil on them, season with salt and pepper.

    Bake Until soft, ±50 minutes.

  2. Once soft, mash them a little and top with roasted chickpeas and a tahini sauce for example.

The Salad

  1. In a big bowl add all the chopped vegetables for the salad and season with salt, pepper, olive oil, lemon juice and zumac.
