Ever tried hummus on pasta? Well, you should! This recipe is astonishing cold or warm. I also call this recipe; the 3 chickpea pasta, but this only works if you’re using chickpea pasta, of course.
Make sure to make hummus yourself, this is a real game changer. For the roasted veggies, you can use regular bell pepper or sweet pointed peppers. The sweetness of the roasted bell pepper counterbalances for the sourness of the lemon juice, and this makes a great combo.
I recommend adding a little of vegetable broth and quite some lemon juice when prepared, so your dish isn’t to dry.

Preheat the oven to 280C/350F and cook pasta in salted water.

Season chickpeas with salt, black pepper, cumin, smoked paprika and chipotle to taste. Add the roughly chopped bell pepper, drizzle with olive oil and lemon juice. Mix well and bake on an oven tray for 30 to 50 minutes, until dry/crunchy.

Add hummus to your cooked and rinsed pasta, add more lemon juice and if wanted some vegetable broth. Top with the roasted veggies and enjoy.
