Green Lentils on Cauliflower Potato Mash

Green lentils are so versatile, quick and easy to make! I love to have them on a potato mash, and specially on the one with cauliflower I share a while back with you guys.

Off On

  1. Chop all your veggies

  2. Heat up a pan, add some oil and sauté onion and garlic.

  3. Add the chopped celery and cook them few minutes. Then add in the mushrooms, zucchini, tomatoes, and mix. 

  4. Add in the lentils followed by the spices (black pepper, rosemary, paprika, cayenne pepper, 

  5. Add water until the lentils are covered and add the broth.

  6. Let it cook until soft, about 20 minutes.

  7. Serve with rice or potato mash!
