Gnocchi With A Vegan Broccoli Sauce


Here with another delicious vegan broccoli sauce with gnocchi! Gnocchi really is one of the best special pastas out there in my opinion, I love them 🙌.

This dish makes a great fit for a meal prep as it’s easy and does not require a lot of work honestly, it’s pretty easy.

Also want to add a quick not here about the chickpeas used in this recipe.

Most of the people buy their chickpeas in cans, which is fine.

But honestly if you eat any kind of legumes often, I strongly recommend using dry beans and a slow cooker to cook your beans. This saves you a lot of money, and you’re sure there are no preservatives in your food that way.

Slow cookers are super useful to make instant pot recipes. Amazing for an effective meal prep, you just set them to cook overnight, and they will be ready by the morning.

Brussels sprouts 🇧🇪 and pumpkin 🎃 (optional)

The chickpeas and sprouts + pumpkin 🎃

  1. Season

    Apply the seasoning to each of the two. Both need salt, olive oil and pepper.

    Chickpeas additional garlic powder and the Brussels sprouts with pumpkin some coriander or oregano.

    Feel free to replace the chickpeas with any legumes of your liking
  2. Roast them

    Roast these for 40 minutes in the oven on 200°c/390 F.

The broccoli gnocchi 🥦

  1. Cook the broccoli

    ✅ Heat up a pan and add some coconut oil.
    ✅ Add chopped leek and garlic.
    ✅ After a few minutes, add your broccoli.
    ✅ Some water 🌊.
    ✅ Vegetable broth.
    ✅ Black pepper
    ✅ Let cook for 10 minutes until the broccoli is soft.

  2. Blend

    ✅ Now put it into the blender and add the remaining ingredients:
    - Your roasted nuts.
    - The cream (if using).
    - Some water (if needed, the more water, the more fluid).
    - Nutritional yeast (not too much).
    - Blend, taste and adjust where needed.

  3. Cook the gnocchi

    ✅ Cook your gnocchi and combine with the sauce.
