This quick lentil pasta sauce with eggplant is just an everyone’s fav! You can’t miss with this, and the flavor of the eggplant always goes will with tomato. That’s why pasta ala norma is one of my favorite pasta’s.
You could even have this with some potato mash, it would go very well with it ????.
Eggplant Lentils Pasta Sauce
Ingredients
Instructions

Start by chopping up all your veggies.

Heat up a pan and add some olive oil.

Sauté you onion and garlic.

Add tomato paste after few minutes.

Add in the lentils and stir well.

Now pour in the water and tomato sauce, followed by some vegetable broth. Let cook for 5-10 minutes before adding the vegetables.

Add in all the vegetables, stirr well and cook 10 more minutes until soft.

Enjoy with some pasta or even a potato mash!
