  1. Grab a big pot, heat it up and add coconut oil. Once heat add in your chopped onion, sauté for a few minutes. Add the garlic and ginger, sauté those as well for about a minute.

  2. Now add all the remaining ingredients (carrots, broccoli, bell pepper, water to cover, vegetable broth, bok choy) and let simmer for 15 minutes. Taste and adjust flavour.

  3. Meanwhile, sauté your mushrooms. Grab a pan, heat up and add coconut oil. Once heated add the sliced mushrooms, salt and black pepper. Sauté for about 5 to 6 minutes, until soft.

  4. When the noodles soup has almost done simmering, pour in your oat milk and mix well. Also add in your cooked noodles.
