Off On

  1. Grab a big pot, heat it up and add coconut oil. Once heat add in your chopped onion, sautΓ© for a few minutes. Add the garlic and ginger, sautΓ© those as well for about a minute.

  2. Now add all the remaining ingredients (carrots, broccoli, bell pepper, water to cover, vegetable broth, bok choy) and let simmer for 15 minutes. Taste and adjust flavour.

  3. Meanwhile, sautΓ© your mushrooms. Grab a pan, heat up and add coconut oil. Once heated add the sliced mushrooms, salt and black pepper. SautΓ© for about 5 to 6 minutes, until soft.

  4. When the noodles soup has almost done simmering, pour in your oat milk and mix well. Also add in your cooked noodles.
