Heat up a pan and add the sunflower seeds to it. Toast them thoroughly.
Transfer into a food processor, and add the hemp seeds, dates, coconut oil and process until small.
Transfer to a baking tray, and very tightly press, so it stays together.
To a small pot add in the cornstarch, lemon juice, soy milk, ginger, agave syrup, turmeric, coconut oil and cinnamon.
Turn on the heat, and put the pan on it. Start whisking until the mix becomes very thick.
Transfer onto the base and let sit in the fridge for a few hours or in the freezer to speed up the process. Make sure it doesn't freeze, just cools down.
