These Crispy Potato Croquettes are perfectly golden crispy on the outside but soft and creamy on the inside.

Crispy Vegan Potato Croquettes
Simple but so delicious!
Peel and cut potatoes into small cubes, and boil in salted water for 15 minutes. Or more, depending on the size of your cubes.
Preheat the oven to 200C/400F.
Mash the potatoes and add the black pepper, nutmeg, salt, smoked paprika powder and olive oil.
Taste the mash and adjust spices where needed.
Next up roll small balls and cover in bread crumbs.
Finally, bake for ±20 minutes until golden.
