This was my first time try out a cilantro pesto pasta and wow! This was so good, basil pesto is delicous too but if you are a big cilantro lover (just like me ????), then this recipe is a must try for you.
So much flavour, and all the fresh vegetables make this a great spring/summer dish.
I must say, this is one of my favorite pasta dishes now.

Start by boiling your pasta.

Meanwhile, make the pesto.
To a big bowl add minced garlic, olive oil, salt, black pepper, crushed red chili, pine nuts and chopped cilantro.
Mash thoroughly for about 5 minutes.

Add the pesto to your drained, cooked pasta followed by the edamame beans, corn, frozen peas, cherry tomatoes and cook for a few minutes.

Finally, once done heating, add in the cucumber and avocado.
