This was my first time try out a cilantro pesto pasta and wow! This was so good, basil pesto is delicous too but if you are a big cilantro lover (just like me 😉), then this recipe is a must try for you.
So much flavour, and all the fresh vegetables make this a great spring/summer dish.
I must say, this is one of my favorite pasta dishes now.
Cilantro pesto pasta with corn, edamame, tomato, cucumber
The best fresh summer pasta you will have!
Start by boiling your pasta.
Meanwhile, make the pesto.
To a big bowl add minced garlic, olive oil, salt, black pepper, crushed red chili, pine nuts and chopped cilantro.
Mash thoroughly for about 5 minutes.
Add the pesto to your drained, cooked pasta followed by the edamame beans, corn, frozen peas, cherry tomatoes and cook for a few minutes.
Finally, once done heating, add in the cucumber and avocado.
Enjoy this wonderful meal!
