Don’t really have a suiting name for this recipe as it’s pretty random, but also delicious! For the sausage, you can make our vegan sausage recipe with VTW or just use a store bought one.
You can also use polenta instead of flax meal with the cauliflower grits.
Delicious and cheap homemade vegan sausages, you can give them basically any flavour you wish!
Cauliflower Grits with Vegan Sausage and Zucchini
Random dish of goodness!
To a big pot add the flax meal/polenta, salt, black pepper, and grated cauliflower. Cook it for about 20 minutes.
To a second smaller pot add some oil, sliced onion and sauté.
Add in the garlic, tomato sauce, ketchup, mustard, sugar, ACV, salt, chili, smoked paprika and let simmer for 5 minutes.
Add a bit of the tomato sauce to the cauliflower.
Sausage and zucchini
To a pan add your sausage, zucchini and corn. Top with some salt and cook for 10 minutes.
Serve it up and enjoy!
