Carrot and Potato Mash is a delicious upgrade from regular mashed potatoes and a fantastic way to up vegetable intake. Kids love this and this makes a great toddler dish if you’d add a protein source of some sort.

In this Vegan Potato Casserole With Soy Chunks we used regular potato mash, but you could replace it by this fantastic Carrot Potato Mash.

  1. Boil water, not too much/little because you'll want to use it to mash the potatoes in it later on.

    You want to chop the carrots smaller than the potatoes so that they are nice and soft for mashing, add the potatoes, carrots, onion and vegetable stock to the boiling water.

    Cook for 20 minutes, until soft.

  2. If you used too much water set some of it aside and add some of it when mashing, until desired texture. Mash everything and add olive oil, taste if more vegetable stock is needed and adjust.
