Since in Spain, I have gotten to know many new ingredients and one of them is carob! This is a super healthy ingredient often used as a cacao substitute and tastes pretty similar to it.
A while ago we made this recipe but with cacao, so I wanted to try it out with carob and my homemade vegan silken tofu.

Transfer your silken tofu to a blender, followed by the avocado, agave syrup, the carob, and some soy milk to reach the desired consistency.

Blend everything until smooth, add some more carob powder or agave syrup if needed.

Transfer the pudding to a bowl, crush some nuts and sprinkle them onto the pudding.

Put the pudding into the fridge and let sit for 30 minutes or just start devouring it right away!
