I’m always looking for new ways to prepare lentils and use all the variations. It had been a while since I tried something with beluga lentils.
Pretty simple recipe but great for a meal prep as it requires very little hands on work!
Beluga Lentils With Roasted Veggies
This beluga (black) lentils dish is an excellent meal prep option as it requires a minimum of hands-on work! Super good with rice.
The beluga lentils
Heat up a pan with some coconut oil. Add onion and garlic, fry until golden.
Add the lentils after a few minutes and mix well.
Cover the lentils with water and let them boil for 30 minutes on low heat.
Don't forget to add the spices:
- Bay leaves
- Vegetable broth
The roasted veggies
Add all the veggies to an oven plate. Drizzle them with olive oil and add the spices.
Bake 40 minutes on 200 °C/390 F. Make sure to mix them at least once mid-time.
Combine the roasted veggies and cooked lentils.
Enjoy them with some bread or rice. I topped them with some soy yogurt and spring onions.
Can be frozen.
