These Vegan Beet Root Burgers are so delicious and have a great texture.
Burgers are, of course, ideal inside a bun, but go great with a salad too. These vegan burgers have a somewhat more realistic look than most veggie burgers because of the beetroot.
Vegan Beetroot Burgers
No need for meat with the vegan patties!
Make 4-5 flax eggs by adding the water to the flax meal, let sit for at least 15 minutes.
Shred the beetroots (with a food processor), roughly chop the basil, finely chop the onion and garlic and place in a large mixing bowl with the oats, flax-eggs and oil. Season with salt and pepper.
In a second bowl, crumble tofu and add the mustard and lemon.
Add this to the first bowl and mix well.
Make patties and bake for 20 minutes on 180C/350F.
