20 Minutes Spinach Red Lentils Dahl

Red lentils dahl must be one of my favourite recipes, it’s so quick to make yet super delicious!

Whenever I need a quick meals, this is one of my goto’s and the cool thing about these is that they can be perfectly frozen.

I kept this one super simple and decided to not add in coconut milk, it’s not always necessary 😉.

The best way to prepare red lentils besides our red lentils tortillas, those are so good too!



Off On

  1. Grab a big pot, turn on the heat and add some coconut oil. Let it melt.

  2. Once melted add in the diced shallot, let sauté for 3 minutes. Then add in the minced garlic, ginger and curry paste. Sauté another 2 minutes.

  3. Now add in the remaining ingredients: red lentils, curry powder, vegetable broth, boiling water and tomato sauce. Let simmer about 10 minutes until soft. Taste and adjust if needed.

  4. When it has done cooking you add in the washed spinach and mix it will. Turn of the heat and serve or set aside!
