  1. Add the onion, ginger and garlic to a non-stick frying pan and sauté for 1-2 minutes. 

  2. Add the oats, water and frozen spinach. Simmer for 5 minutes over a medium heat, stirring frequently.

  3. Stir in the black beans, corn, frozen peas, turmeric, cumin, black pepper and vegetable broth. Stir for 2 minutes.

  4. Add avocado, cherry tomatoes, soy yogurt or with any of your favorite toppings.
