Yes… a cake with protein! This vegan protein lemon cheesecake is made with silken tofu, which actually makes it higher in protein than most other cakes!

Besides that, it’s also super creamy thanks to the silken tofu.

You can use store bought tofu for this, but I recommend making your own, and we happen to have a recipe for it!

It’s actually quite easy to (search our website thebgang.com for silken tofu).

The base

  1. Toast the nuts.

  2. Transfer to a food processor and process all the ingredients.

  3. Transfer to baking tray and press until firm.

The filling

  1. To the same food processor add the silken tofu and all the other ingredients, and blitz it all up.

  2. Heat up a small pot and add in the mix, cook for a few minutes until thickened.
