Description

The mashed sweet potatoe is to me one of the best ways to prepare them (besides sweet potato fries ????, of course ????). The apple ???? kale salad is amazing too! And of course, we can't forget the scrambled tofu.

Ingredients
    Sweet potatoes mash
  • 200 grams Sweet potatoes (About 1-2 per person)
  • 1/2 cup Almond milk (Or any plant based milk)
  • 1 tablespoon Vegetable broth
  • 1 teaspoon Nutmeg
  • 1/2 teaspoon Black pepper
  • Scrambled tofu
  • 250 grams Tofu (Firm)
  • 1 teaspoon Turmeric powder (Curry powder is fine too)
  • 1/2 Yellow onion
  • 1 clove Garlic
  • 1 teaspoon Vegetable broth
  • Black pepper (To taste)
  • Red cabbage salad ????
  • 1/8 Red cabbage (Sliced)
  • 1/2 Apple ???????? (Diced)
  • 1/4 cup Cilantro (Or parsley)
  • 1 teaspoon Olive oil
  • Salt (To taste)
  • Black peper (To taste)
  • 1/2 Lemon (Juice)
Instructions
  1. Sweet potatoes ???? mash
    1. Cook the Potatoes: In a large pot, pour enough water to cover an inch of the base. Insert steamer basket and place the chunks of potatoes on top.  Cover the lid and steam on medium heat for 15-20 minutes, or until the potatoes are very tender. Add your vegetable broth as well.
    2. Mash the Potatoes: In a medium-sized bowl, add the steamed sweet potatoes. Mash the mixture until the desired texture is achieved. 
    3. Add Remaining Ingredients: Add almond milk and black pepper. Mix until well combined. Adjust seasoning if needed. 
  2. The scrambled tofu
  3. Scramble and season
    1. Chop garlic and onion fine
    2. Heat up a pan with some coconut oil
    3. Add chopped garlic and onion
    4. Scramble the tofu and add it
    5. Add some vegetable broth and pour in a bit of boiling water (to help dissolve the broth).
    6. As spices add turmeric powder to taste.
  4. The red cabbage salad ????
  5. Season and combine
    1. Slice the kale fine and add it to a big bowl
    2. Cut the apple ???? into squares and add to the bowl
    3. Chop some cilantro, add it
    4. Pour in a bit of olive oil, your lemon juice and add some salt and pepper.
    5. Now stir everything
