This leek, spinach zucchini is so good! I love the flavor that comes from the leek, it’s so unique. And then all the water from the zucchini, oh I’m drooling as I write this ????????.
Added some beans in tomato sauce and potatoes to this!
Leek, spinach and zucchini waterzooi
SO much flavor in this dish, BGANG...
To a pan add some oil, once heated sauté onion and garlic.
After a few minutes, add in the chopped leek and zucchini.
Meanwhile, boil your potatoes
Then add the vegetable broth to the zuchinni-leek. Let cook for 10 minutes.
Then once the zucchini has softened a bit (not too much) add in your spinach. It will massively decrease in size, don't worry.
Once you added the spinach, you can turn off the heat. With the remaining heat it will be cooked, but not overcooked.
