This recipe is so pure in flavour and tastes phenomenal.

I came across this recipe from @kalememaybe, and it’s honestly my new favorite way to eat gnocchi (gnocchi al pesto, don’t worry, I still love you). ????????

At first, I was like “Where’s the seasoning?”, but once I made it… LOVE AT FIRST BITE.

The delicious flavors come straight from the vegetables in this one. ????

Easy Oven-baked Gnocchi

  1. Preheat the oven to 220C/425F.

  2. Place the gnocchi, chopped tomato, sliced onion, chickpeas, and chopped broccoli on an oven tray and season with olive oil, salt and black pepper.

  3. Toss it around and bake for Β±30 minutes.

  4. Serve and enjoy with a few drops of lemon juice and some vegan feta cheese.
