Simple, elegant and filling gnocchi dish.
Start by sautéing onion in some coconut oil. Add the bell pepper, garlic and mushrooms.
Optionally, bake vegan bacon in the meantime in a different pan. And add them to the mushrooms when ready.
Season with salt and black pepper. Finely add coconut cream, let simmer and meanwhile cook gnocchi.
Combine the cooked gnocchi with the sauce, and enjoy with a salad, beans or what you like.
